Zucchini Parmesan Bites!


These zucchini bites are the perfect appetizer for any gathering, party, happy hour, or event! They are easy to put together, and will have your guests asking for more! These healthy zucchini bites are so tasty and delicious!


Ingredients:

-1 large zucchini

-1 cup Italian style breadcrumbs (you can substitute GF breadcrumbs if desired)

-2 eggs

-1 cup of grated parmesan (divided)

-Fresh Mozzarella (shredded)

-1 15 oz can of San Marzano Crushed Tomatoes

-1 clove of garlic (chopped)

-A sprinkle of salt, pepper, basil, red pepper flakes, and oregano


Next Step:

-Preheat oven to 400 F and line a baking dish with parchment paper.

-Slice the zucchini into bitesize pieces. Set aside.

-In a small bowl scramble the eggs and add a sprinkle of salt and pepper. Then add 1/2 cup of grated parmesan and mix.

-In another small bowl add the breadcrumbs and 1/2 cup of grated parmesan. Mix.

-Take a zucchini slice and dip it into the egg mixture coating both sides, and then quickly dip it in the breadcrumb mixture also coating both sides.

-Lay it on the parchment paper and repeat for the remaining zucchini slices.

-Bake for 11 minutes.

-While the zucchini is baking in a saucepan on the stovetop, heat up the crushed tomatoes, garlic, salt, pepper, basil, oregano, and red pepper flakes. Stir occasionally.

-Take out the zucchini and add a dollop of sauce and then shredded mozzarella on top. I also like to add a sprinkle of parmesan on top after the mozzarella.

-Turn the oven to broil.

-Broil for 3 minutes.

-Serve immediately with a side of sauce.
