Whole Wheat Peanut Butter Chocolate Chip Oat Bars!!

These bars are perfect for breakfast, snacks, and when you are on the go. My kids love to grab a bar before a sports practice for a boost of energy and protein.


Prep time: 8 minutes Cook time: 23-25 minutes

Ingredients:

-1 cup rolled oats

-1 cup of whole wheat flour

-1/2 teaspoon of baking powder

-1/4 teaspoon salt

-1/2 cup butter (softened)

-3/4 cup dark brown sugar

-1 egg

-1/2 cup peanut butter

-1/2 teaspoon vanilla extract

-1 cup of dark chocolate chunk chips


Next Step:

-Preheat oven to 350 F and grease a 7x11 baking dish.

-In a large bowl cream the butter and sugar with a hand or stand mixer. Beat until smooth.

-Add in your peanut butter, egg, and vanilla and continue to mix for 1-2 minutes.

-Then add in your oats, whole wheat flour, baking powder, and salt. Mix until combined.

-Fold in your chocolate chips.

-Add to your baking dish and smooth out evenly.

-Bake 23-25 minutes until the edges are golden brown.

-Let cool for 20-30 minutes and then cut up into bars.
