It's Monday, but it's also National Margarita Day! That's why I have to share one of my favorite margarita recipes! I love a good watermelon margarita because they are so refreshing and delicious! As I drink my watermelon margarita while it's snowing outside, I will imagine a hot and 80 degree sunny day!! Cheers! xo
Prep time: 10 minutes Serves 2-3
Ingredients:
-2 oz tequila
-1/2 fresh squeezed lime
-2 cups fresh watermelon
-1/2 teaspoon watermelon simple syrup
-2 slices jalapeño
-Sugar or Salt for your rim
Watermelon Simple Syrup:
-1 cup watermelon
-1/4 cup granulated sugar
Next Step:
-Pour 2 oz of tequila in a glass and put your jalapeño slices in. Set aside.
-On the stovetop, heat 1 cup of watermelon and 1/4 cup of sugar on low to make your simple syrup. Using a potato masher or an electric hand mixer, mash up the watermelon. Heat on low and stir for 5 minutes.
-Pour your liquid over a mesh strainer to strain out the seeds and pulp. Set your simple syrup aside.
-In a blender, add 2 cups of fresh watermelon and blend on high for 20 seconds. Pour the liquid over a mesh strainer to remove any seeds. Take a spoon and gently scrape over the pulp and push whatever will go through the strainer. (Throw away what is left in the strainer.)
-Gently brush a lime over your glass and then dunk your glass in sugar or salt to line your rim. I prefer sugar with this recipe, but either will work. Add a couple cubes of ice to your glass and set aside.
-In a shaker, add ice, the tequila/jalapeno mixture, lime juice, 1/2 teaspoon of simple syrup, and 2oz of your blended/strained watermelon juice.
-Shake for 30 seconds and pour into your glass.
-Garnish your watermelon margarita with fresh watermelon and lime.

*The simple syrup will last a few weeks in the refrigerator if stored correctly. It can be used in many drinks.
