You don't have to go to a restaurant to get an incredible and tasty tuna poke tower! The longest part of this recipe is cooking the brown rice. Everything else takes 10 minutes! This meal is healthy and so delicious! You can serve it for lunch, dinner, or even an appetizer.
Ingredients:
-1/3 lb fresh sushi grade tuna
-1/3 cup seedless cucumber (peeled and chopped)
-1/2 avocado (mashed)
-2 tablespoons soy sauce
-1 teaspoon pure sesame oil
-1/4 teaspoon rice vinegar
-1/2 cup brown rice
-1/4 teaspoon sesame seeds
-salt and pepper
-1 tablespoon Sriracha
-1 tablespoon mayo
Next Step:
-Cook your brown rice and set aside.
-Peel and chop a cucumber.
-In a small bowl mash the avocado and sprinkle with salt and pepper.
-Delicately cube the tuna and put it in a separate bowl.
-To the tuna add the soy sauce, sesame oil, rice vinegar, and a sprinkle of pepper. Mix.
-Take any small bowl or ramekin and start building your Tuna Poke Tower!
-Add a layer of cucumber.
-Then add a layer of smashed avocado pushing down to completely cover the cucumbers.
-Add the tuna on top of the avocado and spread all around.
-Then for the last layer add the brown rice covering all of the tuna.
*You won't need all of the brown rice*
-Put a small plate on top of the bowl and gently flip upside down. Then carefully pull the bowl up and you will have your tower.
-Sprinkle sesame seeds on top.
-To make the sriracha drizzle, in a small bowl mix the mayo and sriracha. Either drizzle it on top or serve in a small bowl on the side.
-Serve immediately. ENJOY!!
