This cookie tastes so good and is made with all healthy ingredients. No oil, butter, or sugar! This cookie is a win win with its ooey gooey chocolate center, plus the added bonus of protein with the almond butter! Served warm with coffee or a hot chocolate is my favorite!
Prep time: 5 minutes Cook time: 11 minutes
Ingredients:
-3/4 cup almond flour
-1 cup Gluten free flour
-1/2 teaspoon salt
-1/2 teaspoon baking soda
-1/2 cup creamy almond butter
-1/3 cup applesauce
-6 tablespoons maple syrup
-1 egg
-2 teaspoons vanilla extract
-1.5 cups of dark chocolate chunks
Next Step:
-Preheat oven to 350 F
-In a large mixing bowl whisk together the applesauce, almond butter, egg, maple syrup, and the vanilla extract.
-Next add in the almond flour, gluten free flour, salt, and baking soda. Stir until fully combined.
-Fold in the chocolate chips.
-Roll into balls and place on a baking sheet with parchment paper.
-Bake for 8 minutes and then gently take a fork and push down on your cookies until the chocolate starts to ooze out.
-Bake for 3 more minutes until the edges are golden brown.
-Let cool for 10 minutes on a baking rack and ENJOY!!!
