You would never know there is 1 cup of sweet potatoes in this recipe! This cake is so moist, flavorful, delicious, and bursting with chocolate! It is a family favorite and I secretly enjoy when I can trick my kids into eating their vegetables! haha
Ingredients:
-1 cup of sweet potato puree
-1 1/2 cups of flour
-1/2 cup unsweetened cocoa powder
-1 teaspoon baking soda
-1/2 teaspoon ground cinnamon
-1/2 teaspoon salt
-5 tablespoons salted butter (softened)
-1/4 cup dark brown sugar
-1/4 cup granulated sugar
-2 eggs
-1 teaspoon vanilla extract
-1/4 cup oat milk (any milk will work)
-1/2 cup dark chocolate chips (melted)
-1/2 cup dark chocolate chips (divided) *Set aside 2 tablespoons of chocolate chips.*
-Powdered sugar to garnish.
Next Step:
-Peel 2 large sweet potatoes and cut them into large cubes.
-Boil them until soft.
-Strain the sweet potatoes and then mash them with a fork. Measure out 1 cup and set aside.
-Preheat the oven to 350 F and line a 9x5 baking loaf with parchment paper.
-In a small bowl combine the flour, cocoa powder, baking soda, cinnamon, and salt. Stir to combine and set aside.
-In a large bowl add the softened butter, brown sugar, and granulated sugar. Mix with a hand or stand mixer.
-Then add in the eggs, vanilla extract, and oat milk. Mix until combined.
-Add 1/2 cup of dark chocolate chips to a microwave safe bowl. Microwave on 25 second increments until melted. Be sure to stir after each time.
-Pour the melted chocolate into the batter and mix until blended.
-Slowly pour in the flour mixture and mix until combined and smooth.
-Stir in the remaining chocolate chips.
-Pour the batter into the loaf pan and spread out evenly.
-Sprinkle the 2 tablespoons of chocolate chips on top.
-Bake for 50-60 minutes. Make sure a toothpick inserted comes out clean. (my cake was done at 54 minutes, but every oven is different:)
-Take out and let cool completely.
-Once cooled sprinkle with powdered sugar.
-Serve and ENJOY!!!
