Strawberry Lemon Loaf!


It's strawberry picking season! If you are wondering what to make with all of your fresh picked strawberries, than try this amazing Strawberry Lemon Loaf! It is so delicious and bursting with fresh strawberries and lemon. This loaf is moist, flavorful, and perfect with a side of coffee or tea! Have a great day! xo


Ingredients:

-1 3/4 cup flour

-1 cup granulated sugar

-1 tbsp lemon zest

-1/4 cup vanilla greek yogurt

-1/2 tsp vanilla extract

-2 eggs

-1 1/2 tbsp fresh squeezed lemon juice

-1/2 cup salted butter (melted)

1/4 cup oatmilk

-1/2 tsp baking soda

-1/2 tsp baking powder

-pinch of salt

-1 1/4 cup strawberries (sliced)


Glaze:

-1 cup powdered sugar

-1 1/2 - 2 tbsp fresh squeezed lemon juice

Next Step:

-Preheat oven to 350 F and line a 9x5 loaf pan with parchment paper.

-In a large mixing bowl combine the sugar and lemon zest. Mix well so the lemon zest coats the sugar.

-Then add in the butter and mix with a hand or stand mixer.

-Next, add in the yogurt, vanilla, lemon juice, and oat milk. Continue to mix.

-Add in the eggs and mix. Set aside.

-In another bowl add the flour, salt, baking soda, and baking powder. Stir to combine.

-Slowly add the dry ingredients into your wet ingredients and mix until combined.

-Lightly coat your sliced/chopped strawberries with flour.

-Add the strawberries into the batter and gently fold in.

-Pour the batter into your loaf pan and bake for 55 minutes.

-Be sure to insert a toothpick at the end to make sure it is cooked all the way through.

-Let your Strawberry Lemon Loaf cool completely.

-Once cooled, make the glaze.

-Combine the powdered sugar with the fresh squeezed lemon juice. Mix with a hand mixer until thick and smooth.

-Drizzle the glaze all over the loaf.

-Slice, serve, and ENJOY!!!
