Strawberry Crumb Love Muffins!!



Valentine's Day is around the corner and these strawberry muffins are the perfect treat to add to your day! All of the fresh strawberries, crumble, and vanilla icing make these muffins irresistible! If you have little helpers in the kitchen, they love to help slice the strawberries and drizzle the icing on top. These muffins are a great breakfast or snack. I love to eat them for dessert with a side of fresh whipped cream and berries!


Prep time: 10 minutes Cook time: 17 minutes


Ingredients:

Muffins:

-1 1/4 cups flour

-1/4 cup brown sugar

-1/4 cup granulated sugar

-1/4 teaspoon salt

-1/8 teaspoon baking soda

-1 teaspoon of baking powder

-1 large egg

-1/4 cup vegetable oil

-1/4 cup buttermilk

-3/4 teaspoon vanilla extract

-3 1/2 tablespoons sour cream

-1 cup of fresh strawberries (chopped, make sure not to use frozen strawberries)

Crumble:

-5 tablespoons melted and cooled butter

-1/2 cup flour

-1/2 cup brown sugar

Vanilla Icing:

-1/2 tablespoon of softened butter

-3/4 cups powdered sugar

-1/4 teaspoon vanilla extract

-2 tablespoons of oat milk

-dash of salt


Next Step:

-Preheat your oven to 400 F and line your muffin tin. (This recipe makes 9 muffins)

-In a large bowl whisk your flour, brown sugar, granulated sugar, balking soda, baking powder, and salt together.

-Then add the egg, vegetable oil, and buttermilk. Mix with a hand or stand mixer until combined.

-Then add in the sour cream and vanilla and continue to mix. Your batter will appear thick and smooth.

-Gently fold in your strawberries and mix with a spatula.

-Transfer to your muffin tin and fill 3/4 to the top.

-Then make your crumble. In a new bowl, mix the melted butter brown sugar, and flour. Start with using a fork and then continue with your hand until you get a good crumble consistency.

-Sprinkle a good amount of crumble on each muffin (so it is completely covered) and ever so slightly push down. (The crumble should not go below the batter)

-Bake for 17 minutes (or until a fork or toothpick comes out clean)

-Transfer to cooling rack.

-While your muffins are cooling, make the icing. Combine the powdered sugar, butter, vanilla extract, milk, and salt. Mix with a hand mixer until desired consistency. When your muffins are completely cooled, drizzle the icing on your muffins.
