These steak fajitas are so delicious! They are the perfect easy and quick weeknight family dinner. They can be ready and on the table in 15 minutes!
Ingredients:
-2 Rib Eye Steak Fillets
-1 tablespoon of olive oil
-1 teaspoon paprika
-1 teaspoon chili powder
-1/2 teaspoon cumin
-1/4 teaspoon garlic powder
-1/4 teaspoon salt
-1/4 teaspoon pepper
-1 red pepper (sliced)
-1 green pepper (sliced)
-1 yellow pepper (sliced)
-2 jalapenos (sliced)
-1 onion (sliced)
-Whole wheat flour tortillas or corn tortillas
-Avocado
-Shredded Mexican Cheese
-Rice (optional)
-Hot Sauce
Next Step:
-Drizzle the olive oil on both sides of the steak.
-In a small bowl combine the paprika, chili powder, cumin, garlic powder, salt, and pepper. If you want it spicy, you can add 1/4-1/2 teaspoon of cayenne pepper. Stir.
-Rub the mixture into the steaks.
-Grill the steaks to medium. Slice and set aside.
-Slice the peppers and onions and drizzle a little olive oil on top and sprinkle with salt and pepper.
-On the stove top (or if you have a vegetable grill pan you can do this on the grill) sauté the peppers and onions for 5 minutes.
-Put your fajitas together! Take a tortilla and add rice, peppers and onions, steak, avocado, and a sprinkle of Mexican cheese.
-I like to add my fajita to a panini maker to quickly grill/sear the top. This step is optional.
-Serve with a side of hot sauce, salsa, and guacamole!
