Spinach Chocolate Chip Mini Muffins!

I love these muffins and they are a great way to get your greens in! These muffins are delicious and have 2 heaping cups of spinach in them! If you have any picky eaters at home, they will be shocked to know these muffins are bursting with spinach, bananas, oats, and flax seeds. I love to drizzle peanut butter on top, but that is optional. These muffins are a great way to get protein, fiber, vitamin A, C, K1, folic acid, Iron, calcium and more! YUM!!


Ingredients:

-2 cups of baby spinach (stems removed)

-2 very ripe bananas

-2 eggs

-1/4 cup pure maple syrup

-2 tablespoons salted butter (melted)

-1/2 teaspoon vanilla extract

-1 1/4 cup flour (you can substitute 1 cup GF flour)

-1/3 cup cocoa powder

-1/3 cup quick rolled oats

-1 tablespoon ground flaxseed

-1/2 teaspoon baking soda

-1/4 teaspoon baking powder

-1/4 teaspoon salt

-1/2 cup mini dark chocolate chips

-1/2 cup peanut butter (melted)

Next Step:

-Preheat the oven to 350 F and lightly butter your mini muffin pan.

-In a blender add the spinach, bananas, and melted butter. Blend until you have a smooth puree. Pour into a large bowl.

-Then add in the maple syrup, eggs, and vanilla extract. Whisk to combine.

-In a small bowl combine the flour, cocoa powder, oats, flaxseed, baking soda, baking powder, and salt. Mix with a spoon to combine.

-Pour the flour mixture over the spinach mixture and mix with a large spoon until combined.

-Pour the chocolate chips in and stir.

-Add the batter to the muffin pan filling to the top.

-Bake for 11 minutes or until a toothpick inserted comes out clean.

-In the microwave melt the peanut butter and then drizzle all over the muffins. *This step is optional.

-Serve and ENJOY!!!
