Yum! I love spicy black beans and quinoa. This delicious meal is perfect for lunch or dinner. It is filled with quinoa, black beans, peppers, onions, corn, shredded cheese, and avocado. It is so flavorful, easy to put together, and enjoyed by my whole family. Make sure to add your favorite hot sauce at the end!
Prep time: 8 minutes Cook time: 22-25 minutes
Ingredients:
-3/4 cup quinoa (rinsed)
-1 1/2 cups vegetable broth
-1 can of black beans (drain and rinse)
-1 red pepper (chopped)
-1/2 large onion (chopped)
-1 jalapeno (copped- take out seeds)
-1/2 tablespoon olive oil
-1 teaspoon cumin
-2 garlic cloves (chopped)
-1/4 teaspoon ground pepper
-1/4 cayenne pepper
-pinch of salt
-3/4 cup frozen white corn
-2 tablespoons chopped cilantro (divided)
-Avacado (sliced)
-shredded mexican cheese
-dollop of sour cream
-hot sauce
Next Step:
-On the stove top heat up the olive oil and sauté the peppers and onions for 3 minutes.
-Add the chopped garlic and sauté for 1 minute.
-Add the quinoa, vegetable broth, cumin, ground pepper, cayenne pepper, and salt.
-Bring to a boil, then cover and turn heat to low to simmer for 17 minutes. (or until the quinoa is done)
-Mix twice while cooking.
-When the quinoa is finished, add the corn, beans, and 1 1/2 tablespoons of chopped cilantro. Stir.
-Heat on low for 4-5 minutes.
-Serve with sliced lots of sliced avocado, shredded mexican cheese, a dollop of sour cream, and don't forget the hot sauce! :-)
