This easy to make avocado toast packs a ton of flavor, protein, and veggies!
Prep time: 5 minutes Cook time: 5 minutes
Ingredients:
-3/4 cup baby arugula
-1 piece of bread of your choice
-1/2 avocado
-1 egg
-1 tomato
-1 lemon
-balsamic vinegar
-1/4 teaspoon chili oil
-pinch of salt
-pinch of pepper
-pinch of red pepper flakes
-everything seeds (I love the one from Trader Joe's)
Next Step:
-In one small bowl add your arugula and a drizzle of balsamic vinegar and a drizzle of lemon. Mix and set aside.
-In another bowl cut up and smash 1/2 an avocado and add 1/4 teaspoon of chili oil, a pinch of salt, a pinch of pepper, and a pinch of red pepper flakes. Mix and set aside.
-Toast your bread.
-Cut thin slices of your tomatoes.
-Pan fry your egg (in a small tab of butter or oil) and cook it over easy. Add a pinch of pepper while cooking.
-Put your avocado toast together: Spear the avocado on the toast, then add your arugula, next put on your tomatoes, then carefully add your egg on top. Sprinkle with everything seeds.
