Spicy Asian Cucumber Salad!


This cucumber salad is so delicious! I love to eat it as a healthy snack and to serve it as a side dish for BBQ's and get togethers! It only takes 5 minutes to put together and is bursting with flavor and crunch! Cucumbers are high in nutrients, antioxidants, they promote hydration, and can help with overall bone health, and inflammation!


Ingredients:

-1 large seedless cucumber

-1 1/2 tablespoons low sodium soy sauce

-1 1/2 tablespoons rice vinegar

-1 teaspoon toasted sesame oil

-1/2 teaspoon honey

-1 clove garlic (chopped)

-1/2 teaspoon Momofoku Chili Crunch ~Click to order~

-1/8 teaspoon salt

-1 teaspoon sesame seeds

-1/4 teaspoon red pepper flakes (optional)


Next Step:

-Wash and slice the cucumber and set aside.

-In a glass jar with a lid, add in the soy sauce, rice vinegar, sesame oil, honey, garlic, chili crunch, salt, sesame seeds, and red pepper flakes for an extra kick of spice.

-Place the lid on top and shake for 1 minute.

-Pour over the sliced cucumbers.

-Serve immediately and ENJOY!!!

*If you are making this in advance of serving, see below.*

~Cucumbers hold a ton of water, so to ensure that the dressing doesn't become watery you will need to add one more step to this recipe. After you slice the cucumbers sprinkle sea salt on top. Cover and place in the refrigerator for 15 minutes. Drain the excess water and then add the dressing on top.*

~If you are serving a larger crowd you can double/triple the recipe.
