Spaghetti with Pistachio Pesto and Pancetta!


As you probably know by now, I LOVE pesto! Today, I am sharing my favorite pistachio pesto with pancetta recipe. This meal can be ready and on the table in 20 minutes. It is so delicious, fresh, and bursting with flavor! The whole family loves this meal, which is always a bonus when the kids love it too!


Ingredients:

-2 cups fresh basil leaves

-1/2 cup olive oil (a good one)

-1/2 cup of fresh grated parmesan

-4 cloves of garlic

-1/4 cup of salted pistachios

-1/2 tsp red pepper flakes

-1/2 tsp ground pepper

-1/4 tsp salt

-1 cup pasta water

-Pancetta (you can add as you would like)

-Spaghetti

-Extra parmesan and chopped pistachio's for garnish


Next Step:

-Boil a large pot of water on the stovetop. Once boiling, make sure to salt the water. Add the spaghetti and cook to al dente.

-While the pasta is cooking, pan cook the pancetta. I like to get it nice and crispy! Once it is done, chop up and set aside.

-Using your blender, add the fresh basil, olive oil, parmesan, garlic, pistachios, red pepper flakes, ground pepper, and salt. Blend until smooth.

-Take out 1 cup of pasta water.

-Drain the pasta and immediately put the pasta back into the same pot.

-Add the pistachio pesto and 2/3 cup of pasta water. Mix. Add more pasta water if you want a creamier texture.

-Plate your spaghetti and top off with pancetta and fresh parmesan.

-Serve and ENJOY!!
