This is the perfect easy and quick weeknight dinner! You can have it ready and on the table in 15 minutes! It is a fun and unique twist on a pesto sauce. I love artichokes and they make for a delicious and flavorful pesto sauce!! My whole family loves this meal!
Prep time: 8 minutes Cook time: 8 minutes
Ingredients:
-1 lb spaghetti (you can substitute GF spaghetti)
-1 can organic artichoke hearts (in water)
-1/2 lemon (zest and juice)
-1/2 teaspoon pepper
-1/2 teaspoon salt
-1/2 teaspoon red pepper flakes
-5 cloves of garlic
-1/4 cup and 2 tablespoons olive oil
-1 cup grated fresh parmesan (divided)
-3 tablespoons fresh parsley (chopped)
-1 cup cooked pasta water
Next Step:
-Boil a large pot of water.
-Drain the artichoke hearts.
-In a blender add the artichoke hearts, lemon zest and juice, pepper, salt, red pepper flakes, garlic, olive oil, and 1/4 cup of parmesan.
-Blend until you have a smooth consistency. Set aside.
-Salt the boiling water and cook your pasta to al dente.
-Set aside 1 cup of cooked pasta water before you drain the pasta.
-Drain the pasta and immediately pour the pasta back into the pot it cooked in.
-Pour the artichoke pesto over the pasta. Feel free to add as much pesto as you would like.
-Start with adding 1/2 cup of cooked pasta water and 1/2 cup of parmesan and mix.
-Add more pasta water if needed to get your desired consistency. (It will be the consistency of a pesto and won't be saucy.)
-Sprinkle the fresh parsley on top and mix.
-Serve immediately and add extra red pepper flakes and parmesan.
