This is the best weeknight dinner recipe! So easy to make with tons of vegetables, protein and flavor. I love to pair the fajitas with Spanish rice, avocado, black beans, shredded Mexican cheese, and salsa. After the kids take their helping, make sure to spice it up with some hot sauce! (My favorite is Cholula Hot Sauce- Origional)
Ingredients:
-1 1/2 lb peeled and deveined shrimp
-1 red pepper (sliced)
-1 green pepper (sliced)
-1 yellow pepper (sliced)
-2 jalapenos (sliced)
-1 onion (sliced)
-1/4 cup olive oil
-1 1/2 teaspoons paprika
-2 teaspoons chili powder
-1 teaspoon cumin
-1/2 teaspoon garlic powder
-1/2 teaspoon salt
-1/2 teaspoon pepper
-Whole wheat flour tortillas or corn tortillas
Sides to add to your fajitas
-Avocado
-Spanish rice
-Shredded Mexican cheese
-Black beans
-Salsa
Next Step:
-Preheat oven to 400 F and start rice (I use a rice cooker and add 1 1/2 cups of white long grain rice, 2 1/8 cups of water, and 1/2 teaspoon of turmeric.)
-In a measuring cup, pour 1/4 cup of extra virgin light olive oil in. Add all of the spices-paprika, cumin, chili powder, garlic powder, salt, and pepper. Mix and set aside.
-Slice your red pepper, yellow pepper, green pepper, onions, and jalapenos. Add to a baking sheet and set aside.
-Add your shrimp to a bowl and pour 1/2 of your olive oil mixture on top and stir so all of the shrimp are coated. Then put your shrimp on another baking sheet. (Make sure they are not touching or overlapping so they cook evenly.)
-Pour the remaining olive oil mixture over your vegetables.
-Put the vegetable sheet pan into the oven and set timer for 10 minutes.
-Then move your vegetable sheet pan to the lower oven rack and put your shrimp pan on the top rack and cook for 10 minutes.
-Start heating up your black beans, and slice up your avocado.
-When finished remove both trays from the oven. At this point your rice and black beans should be done.
-Start putting together your fajitas!
-Whole wheat flour tortilla, shrimp, rice, avocado, beans, peppers, onions, shredded cheese, and salsa.
-As a last step, I love to heat up the fajitas. My favorite is to put it in a panini press. You can also do this on the stovetop in a pan.
-Don't forget the hot sauce!
