S'mores Skillet Cookie!!

OMG!! This may be my new favorite dessert! There is something so delicious about the combination of toasted marshmallows, warm melted chocolate, and graham crackers that is SO good! I love making this dessert. It is always a crowd favorite and it is easy to put together.


Prep time: 8 minutes Bake time: 24 minutes

Ingredients:

-1/2 cup flour (unbleached all-purpose)

-1/4 tsp salt

-1/4 tsp baking soda

-1/4 cup dark brown sugar

-1/4 cup granulated sugar

-1 tsp vanilla extract

-1/4 cup melted butter

-1 medium/large egg yolk

-2 full graham crackers (spit into 8 pieces)

-2 Hershey's chocolate bars (broken up)

-1 cup mini marshmallows (divided)

-1/4 cup dark chocolate chunk chips (the bigger the chips the better!)

Next Step:

-Preheat oven to 350 F.

-Grease your skillet with butter- I used a 6 1/4 mini cast iron skillet.

-In one bowl combine the flour, salt, and baking soda. Set aside.

-In another bowl mix with a fork the granulated sugar, dark brown sugar and vanilla extract. -Then add in the melted butter. Mix.

-Once combined add the egg yolk and stir well.

-Next, add in the flour mixture and mix with a fork until combined.

-Take 1/2 of the cookie dough and press down into the skillet covering the bottom.

-Then place the graham crackers all over the top of the batter.

-Then add the Hershey's chocolate bars on top of the graham crackers.

-Then add 1/2 cup mini marshmallows on top of the chocolate.

-Next, add 1/4 cup chocolate chips to the remaining cookie dough batter and stir to combine.

-Gently place the batter on top of the marshmallows and try and cover the entire top.

-Bake for 24 minutes. (you will know when it is done when the middle is set and the edges are a light golden brown)

-Take the skillet out of the oven and add 1/2 cup of marshmallows to the center of your skillet. I would suggest using The Jo Chef Superior RX Kitchen Torch to toast the marshmallows on top. You can find this on amazon. However, you can also put the skillet back in the oven on broil for 2 minutes to toast the marshmallows. Watch this step carefully so the marshmallows don't burn.

-Once your S'mores Skillet Cookie is done, let it sit for 10 min.
