This is one of my favorite cookie recipes!!! These cookies are bursting with Reese's peanut butter chips and filled with a dark chocolate center. I love to eat them warm with a big scoop of vanilla ice cream on the top! I hope you love them as much as I do!!!
-1/2 cup salted butter (room temperature)
-1/3 cup brown sugar
-1/3 cup granulated sugar
-1 teaspoon vanilla extract
-1 cup all purpose flour
-1/4 teaspoon salt
-1/2 teaspoon baking soda
-1 cup Reese's Peanut Butter Chips
-Dark Chocolate Disks
-Preheat oven to 350 F and line a baking sheet with parchment paper.
-Add the butter, brown sugar, and granulated sugar into a large bowl. Using a hand mixer, mix until combined.
-Then add in the egg and vanilla extract. Mix and set aside.
-Add the flour, salt, and baking soda to a small bowl and whisk to combine.
-Pour the flour mixture into the wet ingredients and mix until combined.
-Fold in the Reese's peanut butter chips.
-Take 1 tablespoon of batter and lay it on the baking sheet.
-Add 1 dark chocolate disk on top.
-Then add 1 tablespoon of cookie batter on top. Shape into a ball and make sure the chocolate disk is completely covered.
-Bake for 11 minutes.
-Take out and let rest for 10 minutes.
-Serve and ENJOY!!! (I love these cookies warm with a scoop of vanilla ice cream!)
