Red Velvet Layered Whip!

If you are looking for a dessert that is easy to make and so delicious give this recipe a try! I love to serve this at dinner and birthday parties. I love single serve desserts and this one is fun to make and even better to eat! You can use any size glass and add any berry to this yummy dessert!


Ingredients:

-1 cup cake flour

-1/2 teaspoon baking soda

-1/4 teaspoon salt

-2 tab lessons unsweetened cocoa powder

-3/4 cup granulated sugar

-1/2 cup salted butter (room temperature)

-1 egg

-3/4 teaspoon vanilla extract

-1/2 cup buttermilk

-1 1/2- 2 tablespoons red food coloring

-Mini dark chocolate chips

-Red sprinkles

Whipped Cream:

-1 cup heavy whipping cream

-1/4 tsp vanilla extract

- 2 tablespoons powdered sugar


Next Step:

-Preheat the oven to 350 F and line a mini cupcake tray with liners.

-In a small bowl combine the cake flour, baking soda, salt, and cocoa powder. Whisk to combine.

-In a separate bowl using a hand mixer, add in the butter and sugar. Mix to combine.

-Then add in the eggs, butter milk, and vanilla. Mix.

-Mix in the red food coloring.

-Add the batter to the mini muffin pan and bake for 12-15 minutes.

-Take out and let cool completely!

-Once the cupcakes are cooled completely, remove the liners and set aside.

-To make the whipped cream, take a cold mixing bowl and add in the heavy whipping cream, vanilla extract, and sugar. Beat for a couple of minutes, starting on a low speed and then increasing until high peaks form.

-Now its time to layer!

-I like to use a tall thin glass, but any glass will work.

-Start with a layer of whipped cream, then a sprinkle of mini chocolate chips, then a red velvet cupcake. (I like to gently press down on the cupcake before I add it in.) Then repeat these steps until your glass is full.

-Add a few red sprinkles and dark chocolate chips on top for decoration.

-Serve immediately or refrigerate until ready to eat.
