Raspberry Crumble Muffins!


Its raspberry picking season and my family just picked the best raspberries! I was so excited to come home and make these delicious Raspberry Crumb Muffins. They are so moist and tasty! They are definitely my favorite summer muffin!


Ingredients:

-1 cup raspberries

-1 cup all purpose flour

-1 1/4 teaspoon baking powder

-1/4 cup salted butter (softened)

-1/2 cup vanilla greek yogurt

-1/4 cup & 1 tablespoon granulated sugar

-2 eggs

-1 teaspoon vanilla extract

Crumble:

-2/3 cup all purpose flour

-1/3 cup granulated sugar

-1/4 cup dark brown sugar

-4 tablespoons salted butter (melted)


Next Step:

-Preheat oven to 375 F and line a muffin tray with liners.

-In a large bowl add the butter and sugar.

-Using a hand or stand mixer, mix until combined.

-Then add in the eggs and mix.

-Followed by the yogurt and vanilla extract. Continue to mix.

-Next add the flour and baking powder and mix until just combined.

-Gently fold in the raspberries.

-Fill the batter 3/4 way to the top of the muffin pan. Set aside.

-To make the crumble, add the flour, sugars, and melted butter into a small bowl. Using your hands mix the ingredients until a good crumble forms.

-Sprinkle the crumble all over the muffins.

-Bake for 18 minutes or until a toothpick inserted comes out clean.

-Let cool for 10 minutes.

-Serve and ENJOY!!
