Pumpkin Spice Granola Bark!


If you are looking for a healthy fall inspired sweet treat, then try this delicious Pumpkin Spice Granola Bark! This recipe is packed with nutrients, antioxidants, magnesium, Vitamin A, and fiber. It is easy and fun to make and can be served as a snack, dessert, or my favorite is to break it up and serve on top of yogurt!


Ingredients:

-2 1/4 cups quick rolled oats

-1/4 cup pumpkin puree (not pumpkin pie)

-2 tablespoons raw honey

-1 teaspoon pumpkin spice

-2 teaspoons pure maple syrup

-2 tablespoons coconut oil (melted)

-1 egg white

-1 bag dark chocolate chips (around 9-10 oz)

-1/4 cup roasted and salted pumpkin seeds


Next Step:

-Preheat the oven to 325F and line a 10x8 baking dish with parchment paper. (you could use a smaller size too, I don't use the whole pan)

-In a small bowl add the pumpkin, honey, maple syrup, pumpkin spice, egg white and coconut oil.

-Whisk to combine.

-Add in the rolled oats and stir until combined.

-Pour the mixture on your baking sheet and spread out evenly.

-Bake for 25 minutes or until the edges turn a nice golden color.

-Take out and let cool completely.

-Once cooled melt the dark chocolate chips in the microwave. Be sure to stir every 25 seconds so the chocolate doesn't burn.

-Pour 3/4 of the chocolate all over the toasted granola. Spread out to form an even layer. If you need more, use the remaining melted chocolate.

-Sprinkle pumpkin seeds on top.

-You can also add a sprinkle of sea salt if you would like.

-Refrigerate for 1 hour.

-Take out and chop up into smaller pieces.

-Serve & Enjoy!!

*Store in the refrigerator when not eating.
