Pumpkin Crumb Yogurt Muffins!!
These pumpkin crumb yogurt muffins are so delicious! They are incredibly moist and have the best crumble on top! They are easy to put together and great for breakfast, to serve at brunch, or to have as a tasty afternoon snack. These muffins are loaded with pumpkin, protein powder, pecans, yogurt, and more! Enjoy!
Prep time: 10 minutes Cook time 22 minutes
-1 cup all purpose flour
-1/3 cup vanilla whey protein powder
-6 tablespoons salted butter (softened)
-1 cup pumpkin puree (not pumpkin pie filling)
-1/2 cup non-fat vanilla greek yogurt
-2/3 cup granulated sugar
-1/4 teaspoon cinnamon
-1/4 teaspoon pumpkin spice
-1 1/2 teaspoon baking powder
-1/4 teaspoon baking soda
-1/4 teaspoon salt
-2/3 cup all purpose flour
-1/3 cup granulated sugar
-1/4 cup dark brown sugar
-4 tablespoons salted butter (softened)
-1/2 cup chopped pecans
-1 teaspoon cinnamon
-Preheat oven to 350 F and add baking cups/liners to a muffin pan.
-Make the muffin batter.
-With a hand or stand mixer, combine and mix the butter and sugar together.
-Add in the egg and mix.
-Add in the pumpkin, yogurt, vanilla and mix.
-In a separate bowl add in the flour, protein powder, cinnamon, pumpkin spice, baking powder, baking soda, and salt. Mix with a spoon.
-Add the flour mixture to the pumpkin mixture and mix on low speed until combined.
-Set aside and make the crumble.
-In a medium size bowl add in the flour, sugars, chopped up softened butter, and cinnamon.
-Mix/squeeze/crumble with your hands for up to 5 minutes until a good crumble forms.
-Add the pecans to your crumble and mix one minute more.
-Take out 1/2 cup of the crumble and add it to the muffin batter. Mix with a spoon to combine.
-Pour the batter into the muffin pan.
-Top off with the rest of the crumble.
-Bake for 22 minutes or until a toothpick inserted comes out clean.
-Let cool for 15 minutes.
-Serve and Enjoy!!!
