Good morning!! Start you day off with these delicious homemade pumpkin chocolate chip oatmeal pancakes! They are packed with nutrients, antioxidants, fiber, vitamin A, and more!
Ingredients:
-3/4 cup quick rolled oats
-3/4 cup oat milk (any milk will work)
-1/3 cup organic canned pumpkin (not pumpkin pie)
-1/2 tablespoon brown sugar
-1 tablespoon salted butter (melted)
-1 egg
-1/2 cup & 2 tablespoons all purpose flour
-1/2 teaspoon pumpkin spice
-1/2 tablespoon baking powder
-2 to 3 tablespoons dark chocolate chips
-Powdered sugar for garnish
-Pure maple syrup
Next Step:
-In a medium size bowl combine the oats and milk. Let the oats soak in the milk for 5 minutes.
-Then add in the pumpkin, sugar, and butter. Whisk to combine.
-Then whisk in the egg.
-In a separate bowl add the flour, pumpkin spice, and baking powder. Stir to combine.
-Add the flour mixture into the oat mixture. Whisk to combine.
-Stir in the chocolate chips.
-Lightly butter a frying pan.
-Add the batter to the pan and cook a few minutes on each side. (making sure to cook all the way through)
-Serve with a side of fruit, maple syrup, and a sprinkle of powdered sugar.
