Is there anything better than a warm flaky biscuit!?! These pumpkin biscuits are so delicious and can be served for breakfast, a snack, or with dinner. As a bonus they only take 20 minutes to make!! I love making these on Thanksgiving, they are always the first thing to go!
Ingredients:
-2 cups of all purpose flour
-1/4 cup cold unsalted butter (cubed)
-1/4 cup cold salted butter (cubed)
-1 tablespoon & 1 teaspoon baking powder
-1 teaspoon baking soda
-1 1/4 teaspoon pumpkin spice
-1/2 teasopon salt
-2/3 canned organic pumpkin (not pumpkin pie)
-3/4 cup oat milk (any milk will work)
Next Step:
-Preheat oven to 450 F and line a baking sheet with parchment paper.
-In a large bowl add the flour, baking powder, baking soda, pumpkin spice, and salt. Stir to combine.
-Add in the cubed butter and using a pastry cutter press the butter down into the mixture for a few minutes until the dough becomes crumbly.
-In a separate bowl whisk together the pumpkin and milk and then pour onto the flour mixture.
-Using a large fork or spoon mix for a few minutes until your dough forms.
-Place the dough on a floured surface and sprinkle flour on top of your dough.
-It will initially feel sticky (that's ok, it is a wetter dough)
-Knead for 2 minutes. (use more flour if needed)
-Spread the dough out and form into a log.
-Using a knife or a 2 inch dough cutter, cut the dough into round biscuits.
-Place your biscuits onto the parchment lined baking sheet. (you should be able to get 12 biscuits)
-Bake for 13-15 minutes or until the edges are a nice golden color.
-Serve immediately warm with tab butter.
