Pumpkin Apple Oat Bake


If you love baked oats as much as I do, then definitely try this pumpkin apple oat bake! It is a healthy way to start your morning off right. I love the combination of pumpkin and apple almost as much as I love a chocolate/peanut butter combo. This breakfast packs a ton of fiber, antioxidants, vitamin A, and will keep you full throughout your morning. I like to quickly put it together and then get ready for the morning. Then come down to a warm and healthy breakfast! This one is kid approved too! Bonus!


-Prep time: 5 minutes Cook time: 26 minutes Serves: 1 (double/triple the recipe for each oat bake you want to make)

Ingredients:

-1/2 cup oats (you can substitute GF oats)

-1/4 cup pumpkin

-1/4 cup sweetened applesauce

-1 tablespoon syrup

-1 egg

-3 tablespoons oat milk

-1/8 teaspoon vanilla extract

-1/4 baking powder

-1/8 teaspoon cinnamon

-a pinch of ginger, nutmeg, cloves, and salt


Next Step:

-Preheat oven to 350 F

-Lightly butter a 6oz oven safe ramekin.

-In a small bowl combine the oats, baking powder, cinnamon, ginger, nutmeg, cloves, salt and mix. Set aside.

-In another small bowl add the pumpkin, applesauce, syrup, egg, oat milk, vanilla extract, and mix until combined.

-Add your oat mixture to the pumpkin mixture and mix with a spoon until combined.

-Pour the mixture in the the ramekin. (I pour it almost to the top)

-Bake for 26 minutes or until a fork inserted comes out clean.

-Take out and serve!
