Potato Skin Bites!


I am not sure how to describe how delicious these thin and crispy Potato Skin Bites are!!! You will just have to trust me on this one!! haha

They are the best appetizer to snack on during happy hour, pregame for the super bowl, and as a delicious side dish to add to any dinner table.


Ingredients:

-1 large Russet Potato

-2 tablespoons salted butter (melted)

-1/2 teaspoon ground pepper

-1/4 teaspoon red pepper flakes

-1/4 teaspoon garlic powder

-Sharp cheddar cheese (shredded)

-Bacon (chopped)

-1 Fresno pepper (optional, I love the added spice so will usually make 1/2 spicy)

-Sour Cream

-Chives (Chopped)

-Sea salt (optional)

*This recipe will yield around 15-17 potato skin bites. If you are serving more people use 2 potatoes.

Next Step:

-Preheat oven to 400 F and line a large baking sheet with parchment paper.

-Wash and dry the potato.

-Slice the potato so you have between 15-18 slices. Try and keep them thin. (not paper thin) Place the sliced potatoes on the baking sheet.

-Melt the butter in the microwave for 30 seconds and then stir in the ground pepper, red pepper flakes, and garlic powder.

-Brush the melted butter on the top of the sliced potatoes and then flip them and repeat this step.

-Bake for 20 minutes and then take out and quickly flip the potatoes.

-Pan fry the bacon until crispy and then chop up into small pieces.

-Bake for another 20 minutes and then take out and add the sharp cheddar on top of each potato and a light sprinkle of sea salt.

-Return to the oven for 2 more minutes.

-Take out and sprinkle the chopped bacon on.

-Then add a dollop of sour cream followed by a sprinkle of chopped chives.

-Serve right out of the oven.
