Pizza Bites!!


These pizza bites are the perfect appetizer to enjoy while watching the Super Bowl! They are always a big hit and the first appetizer to go! I love everything with a little spice, but if you prefer a milder flavor you can add any of your favorite pizza toppings in the center of your pizza bite! You can substitute sweet peppers, onions, mushrooms, cooked beef, spinach, broccoli, ect.. They are so delicious right out of the oven and will have your guests going back for seconds. Enjoy!


Ingredients:

Pizza Dough:

-1 1/4 cup of warm water

-1 1/2 teaspoon instant yeast

-1 1/2 tablespoon sugar

-2 tablespoon olive oil

-2 3/4 cup all purpose flour

-1 teaspoon salt


-Mozzarella Cheese (shredded)

-Parmesan cheese (grated)

-Pepperoni slices

-Jalapeno slices

-2 tablespoons salted butter (melted)

-Red pepper flakes

-Ground pepper

-Everything but the bagel seasoning (optional)

Next Step:

-Combine the warm water, yeast, and sugar in a bowl. Mix to combine and let sit for 10 minutes to activate the yeast.

-Then add in the olive oil and stir.

-I use my stand mixer to make this pizza dough.

-Pour the mixture into the bowl for your stand mixer.

-In a separate bowl mix together the flour and salt.

-Add 2 1/2 cups of flour into the bowl with the water/yeast mixture.

-Set the mixer to low speed until it all comes together.

-Then add in the remaining flour.

-Mix on low/medium speed for 2 minutes.

-Your dough will look a little sticky and that's ok.

-Sprinkle flour on a cutting board and place the dough on top. Sprinkle more flour on top of the dough and shape into a ball.

-Lightly oil a bowl and place the dough inside. Cover and let the dough rise for a minimum of 1 hour. I like to let it rest for 2-3 hours. You will see the dough double in size.

~This is the dough after 3 hours of rising~










-Preheat the oven to 450 F and lightly spray a muffin pan with avocado spray.

-Place the dough back on a floured surface and slice the dough into thirds. Place the remaining 2 dough balls back in the bowl and cover it.

-Roll out the dough thin (you will probably need more flour to roll the dough) and then slice out 3x3 squares.

-In the middle of the square add a layer for mozzarella, a sprinkle of parmesan, 1 pepperoni, and a slice of jalapeño.

-Fold the 3 corners of the dough into the middle and then fold the 4th corner up and over sealing everything in. Place the pizza bite in the the muffin pan with the smooth side up.

-Repeat this step until your muffin pan in full.

-Brush the melted butter on the top of each pizza bite and then sprinkle the top with black pepper, red pepper flakes, and everything but the bagel seasoning.

-Bake for 10 minutes and then take out and flip each pizza bite. Return to the oven and bake for 3-4 more minutes. (depending on how crunchy you enjoy them)

-Serve with a side of marinara sauce!!!
