Peanut Butter Protein Pretzel Bites!!

These peanut butter protein bites are a family favorite! They are perfect to grab on the go or for a quick healthy treat! They are filled with crunchy peanut butter, protein powder, oats, and honey. The melted dark chocolate on top is the best and pairs beautifully with the peanut butter and pretzels. They are delicious and great for a quick energy bite!

Prep time: 10 minutes Refrigerate 25 minutes

-1/2 cup crunchy peanut butter

-1/4 cup chocolate protein powder

-1/4 cup quick rolled oats (can substitute GF oats)

-1 tablespoon honey

-1/4 cup mini dark chocolate chips

-3/4 cup dark chocolate chips

-Pretzels (can substitute GF pretzels)

Next Step:

-In a medium size mixing bowl add the peanut butter, protein powder, and honey. Mix with a spoon until combined.

-Add in the oats and 1/4 cup of the mini chocolate chips. Mix until combined.

-Line a baking sheet with parchment paper.

-Take 1 teaspoon of the peanut butter mixture and put it on top of a pretzel. Then add another pretzel on top to form a "pretzel peanut butter sandwich".

-Repeat this step until all of the peanut butter mixture is done.

-In a microwave safe bowl melt 3/4 cup of dark chocolate chips. (Stirring every 25 seconds so the chocolate doesn't burn)

-Once melted, dip half of the "pretzel sandwich" into the melted chocolate and set it on the baking sheet.

-Repeat this step until all of the pretzels are coated in chocolate.

-Refrigerate for 30 minutes.

-Serve and ENJOY!!!
