Peanut Butter Oat Cookie Cups!


If you love peanut butter as much as I do, then you need to try these amazing peanut butter oat cookie cups!! I served them this past weekend and they were such a big hit! They are so delicious, and bursting with peanut butter, dark chocolate, and oats. They are fun, bitesize, and perfect to serve at parties and gatherings.


Ingredients:

-1 cup of quick rolled oats

-3/4 cup of flour

-1/2 teaspoon baking soda

-1/2 teaspoon baking powder

-1/4 teaspoon salt

-1/2 cup creamy peanut butter

-1/2 cup salted butter (softened)

-1/4 cup brown sugar

-1/2 cup granulated sugar

-1 egg

-1 teaspoon vanilla extract

-1/2 cup dark chocolate chips

-24 Special Dark Hershey Kisses

Next Step:

-Preheat oven to 350 F and lightly butter a mini muffin pan.

-In a small bowl add the oats, flour, baking soda, baking powder, and salt. Whisk to combine. Set aside.

-In a large mixing bowl add the butter, granulated sugar, and brown sugar.

-Using a hand or stand mixture, mix until combined.

-Add in the egg and vanilla and continue to mix.

-Then add in the peanut butter and mix.

-Pour in the oat mixture and mix until just combined.

-Stir in the dark chocolate chips.

-Add a scoop of the batter to your mini muffin pan filling it to the top.

-Repeat filling all of the cups.

-Bake for 15 minutes or until the edges are a light golden brown.

-Take out and let cool for 10 minutes.

-Gently push the Hershey Kisses into each cookie cup.

-Serve and ENJOY!!
