Of all of the recipes I make, this is my husbands favorite! These peanut butter and jelly baked oats do not last long if he is home! haha They taste just like a peanut butter and jelly sandwich, but with no bread and so much healthier! This delicious oat bake is made from oats, maple syrup, applesauce, oat milk, an egg, and PB &J! It is perfect for breakfast, brunch, or a protein/fiber packed snack on the go! YUM!
Ingredients:
-1 1/2 cups of quick rolled oats
-1/4 cup pure maple syrup
-1/4 cup applesauce
-1/2 cup oat milk (any milk will do)
-1 egg
-1 teaspoon of baking powder
-a pinch of salt
-Peanut Butter
-Strawberry Jelly
Next Step:
-Preheat the oven to 350 F. I like to use a silicon muffin pan, but if you don't have one you can lightly spray the inside of your muffin pan.
-In a large bowl, add the oats, maple syrup, applesauce, milk, egg, baking powder, and salt. Mix with a spoon until combined.
-Add 1 tablespoon of the oat mixture to the bottom of the muffin pan.
-Then add 1 teaspoon of jelly. (spread out)
-Next add another tablespoon of the oat mixture.
-Followed by 1 teaspoon of peanut butter.
-Lastly add 1 tablespoon of the oat mixture on top.
-Repeat for each one. This recipe usually yields 6-8 baked oats.
-Bake for 30 minutes.
-Take out and drizzle a little peanut butter on top.
-Serve and ENJOY warm!
