Peanut Butter Chocolate Chip Protein Bites!!


OMG!! These no bake peanut butter protein bites are amazing! They are so easy to put together and a healthy snack to grab at any time of the day. My kids love to eat a couple of these as they head out to a sports practice or game. I love to eat one around 2pm for a quick pick me up. lol. They are so delicious and packed with protein, dietary fiber, magnesium, vitamin E, omega-3 fats, and lignans. (which help to reduce cancer risk)

I always have these in my refrigerator and they are a huge hit with my whole family!


Prep time: 10 minutes Rest time: 30 minutes Yields 16 protein bites

Ingredients:

-1 1/2 cups of quick rolled oats (can substitute GF oats)

-1 cup of peanut butter

-1 cup mini dark chocolate chips

-1/4 cup ground flaxseed

-1/4 cup raw honey

-1/4 cup dark chocolate chips for drizzle


Next Step:

-In a large bowl combine the oats, peanut butter, mini chocolate chips, flaxseed, and honey.

-Mix with a spoon until fully combined.

-Add parchment paper to a large baking sheet.

-Roll your peanut butter oat mixture into bitesize balls and set on the parchment paper.

-Melt the remaining chocolate chips in a microwave safe glass bowl. Mix along the way so your chocolate doesn't burn. Once melted, add to a small plastic baggie and clip the end off. Drizzle all over your protein bites.

-Put your baking sheet in the refrigerator for 30 minutes.

-Serve and ENJOY!!!
