If you are running low on lunch ideas, definitely try this delicious Parmesan Crusted Veggie Grilled Cheese! This yummy sandwich only takes 5 minutes to put together and is bursting with flavor and texture. The key ingredient for this sandwich is the right type of cheese. I highly suggest using an Aged Gouda. I will often serve this in the winter with a side of tomato soup, and on sunny warm days I enjoy this by the pool with a side truffle fries and a crisp white wine!
Ingredients:
-White Sourdough Bread (2 slices)
-1/4 cup Italian style breadcrumbs
-1/4 cup grated parmesan cheese
-1/2-1 tablespoon salted butter (room temperature)
-Aged Gouda
-Pesto
-Tomates (sliced)
-Arugula
Next Step:
-Add the bread crumbs and grated parmesan cheese to a small plate. Mix and set aside.
-Butter both slices of sourdough bread and then dip the buttered side of the bread into the breadcrumb/cheese mixture. Press down to get as much of the mixture to stick to the bread.
-Next, on the other side of the bread add a layer of pesto, sliced gouda cheese, sliced tomatoes, and a handful of fresh arugula. Add the other slice of bread on top. (the parmesan crusted sides should be on the outside.)
-Heat up a pan on the stovetop and grill both sides on low/med heat until the outside is crisp and the cheese has melted in the middle.
-Serve and ENJOY immediately!
