This is by far one of my favorite sandwiches to have for lunch! This open faced parmesan crusted grilled cheese with roasted tomatoes and arugula is bursting with so much flavor!! As a bonus, it can be ready and on the table in 10 minutes or less!
Ingredients:
-1 slice of sourdough bread
-1 large tomato
-4 small yellow tomatoes (often called candy tomatoes)
-A handful of baby arugula
-1/2 avocado
-Aged Gouda Cheese
-1/2 lemon
-1 tablespoon salted butter (softened)
-1 1/2 tablespoons grated parmesan
-olive oil
-Salt, pepper, and red pepper flakes
-1 sprig of fresh rosemary
Next Step:
-Slice your tomatoes and sprinkle with salt and pepper.
-On the stove top, drizzle a little olive oil to your pan. Heat the pan on med/high so you can quickly sear the tomatoes.
-Once the pan is hot, add the tomatoes and rosemary and cook about 45 seconds on each side.
-Take out and set aside.
-In a small bowl combine the butter, parmesan, and a pinch of pepper and red pepper flakes. Mix to combine.
-Smear the butter mixture on the bottom of your sourdough bread.
-Slice the cheese and cover the top of the sourdough bread.
-Heat the same pan on low and cook the grilled cheese until the top is melted and the bottom is crisp.
-While that is cooking, drizzle a little olive oil and fresh lemon juice on the arugula. Add a pinch of pepper. Quickly toss.
-Slice the avocado.
-Add the parmesan crusted grilled cheese to a plate and top with the arugula, then avocado, and lastly the roasted tomatoes.
-Sprinkle some fresh ground pepper and a pinch of red pepper flakes on top.
-Serve and ENJOY!!!
