I have a sweet spot in my heart and (belly!) for oatmeal raisin cookies!!! These cookie cups are SO delicious and hit the spot every time! They are one of my favorite cookies! I love how crunchy they are on the outside and soft in the middle! I hope you love them as much as I do!!
Ingredients:
-1 1/2 cups of quick rolled oats
-3/4 cup all purpose flour
-1/2 teaspoon baking soda
-1/4 teaspoon baking powder
-1/2 teaspoon cinnamon
-1/4 teaspoon ground nutmeg
-1/2 cup salted butter (softened)
-1/2 cup dark brown sugar
-1/4 cup granulated sugar
-1 tablespoon raw honey
-1 egg
-1/2 teaspoon vanilla extract
-3/4 cup raisins
Next Step:
-Preheat the oven to 350 F and take out a silicone mini muffin pan.
-In a large bowl using a hand or stand mixer, beat the butter, brown sugar, and granulated sugar together.
-Then add in the egg and continue to mix.
-Add in the honey and vanilla extract and mix. Set aside.
-In a small bowl add the flour, baking soda, baking powder, cinnamon, and nutmeg. Stir with a spoon to combine.
-Add the flour mixture into the wet ingredients and mix with a hand or stand mixer until combined.
-Stir in the oats and raisins.
-Fill the mini muffin pan to the top.
-I was able to make 24 oatmeal raisin cookie cups with this recipe.
-Bake for 16-17 minutes.
-Take out and let cool for 15 minutes.
-Serve and ENJOY!!!
