Oatmeal Pumpkin Chocolate Protein Muffins!

As you probably know by now, I have a weakness for muffins!! These oatmeal pumpkin chocolate protein muffins are the best! They are the perfect way to start your day! My kids love to pack them in their lunch boxes or have them for an after school snack. They are packed with protein and fiber and oh so delicious!!


Ingredients:

-12 oz organic canned pumpkin (not pumpkin pie)

-1/2 cup all purpose flour

-1/2 cup quick rolled oats

-1/2 cup chocolate protein powder

-2 tablespoons unsweetened cocoa powder

-1 tablespoon ground flax seed

-1 tsp baking soda

-1 tsp baking powder

-1/2 tsp cinnamon

-1/2 tsp salt

-1/2 cup mini dark chocolate chips

-1/2 cup butter (softened)

-2/3 cup granulated sugar

-1/3 cup pure maple syrup

-2 eggs

-1/2 tsp vanilla extract

Next Step:

-Preheat oven to 350F and add liners to your muffin pan.

-Using a hand or stand mixer cream the butter and sugar together until fluffy.

-Add in the eggs and continue to mix.

-Add in the vanilla and pumpkin and mix.

-In a separate bowl combine all of the dry ingredients. The flour, oats, protein powder, cocoa powder, cinnamon, salt, baking powder, and baking soda.

-Slowly add in the dry ingredients to the wet ingredients and mix.

-Fold in the chocolate chips and fill muffin liners almost to the top.

-Bake for 20-22 minutes (make sure to insert a toothpick to make sure it comes out clean.

-Let rest for 10 minutes.

-Serve and ENJOY!!!
