These pancakes are so delicious and keeps you full throughout your morning!! This recipe is packed with fiber and protein. I also love making these pancakes with blueberries!
Prep time: 15 minutes Cook time: 5 minutes
Ingredients:
-1 cup of oat milk (can substitute milk of your choice)
-1 cup old fashioned rolled oats (GF or regular)
-2 eggs
-1 tablespoon granulated sugar
-1 tablespoon of melted butter (let cool before adding)
-2/3 cup all purpose flour (can substitute whole wheat or GF flour)
-1/4 teaspoon of salt
-1/4 teaspoon cinnamon
-2 teaspoons baking powder
-1/4 cup mini chocolate chips
Next Step:
-Combine milk and oats, whisk and let sit for 8-10 minutes
-After the oats have softened in the milk, add the cooled melted butter, sugar, and 2 eggs and whisk for 1 minute.
-Then add your flour, salt, cinnamon, and baking powder and mix until combined. (Don't over mix.)
-Fold in chocolate chips.
-Heat nonstick pan or skillet on low with a dab of butter and drop tablespoons of the batter into your pan. Cook a few minutes on each side until the bottoms are light and golden in color and the tops start to bubble.
-Remove from pan and add a sprinkle of powdered sugar.
