Nutella Oat Pancakes!


This homemade pancake recipe is easy and quick to make and super delicious! My kids beg for me to make them pancakes in the mornings, so wanted to come up with a healthy recipe that they could enjoy. The oats provide fiber and nutrients, the egg provides a little protein, and the Nutella is rich in calcium, fiber, and iron.

I love this recipe because if you are not feeling like Nutella one day, you can substitute blueberries, baked apples, bananas, chocolate chips, sprinkles, or anything else you love in your pancakes!

Ingredients:

-1/2 cup quick rolled oats

-3/4 cup & 2 1/2 tablespoons oat milk

-1 egg

-2 tablespoons salted butter (melted)

-1 tablespoon granulated sugar

-3/4 cup flour

-2 teaspoons baking powder

-1/2 teaspoon salt

-Nutella

Next Step:

-In a medium size bowl combine the oats and oat milk. Let sit for 5 minutes.

-Then add in the egg and stir.

-Next add in the butter and sugar. Stir to combine.

-Add in the flour, baking powder, and salt. Stir until fully combined.

-Next add a big scoop of Nutella into a small plastic baggie. Seal and clip the bottom. (nothing fancy, but it works!:)

-On the stovetop, melt a little butter in a pan on low heat.

-Add 1 tablespoon of pancake batter, then swirl on the Nutella, then add 1 tablespoon of pancake batter on top.

-Cook a few minutes on each side until done.

-Sprinkle powdered sugar on top and serve with a side of fruit.
