Mini Shortbread Strawberry Tarts!


How cute are these mini shortbread strawberry tarts! They are such a fun dessert to make and even better to eat! They have a flakey chewy shortbread cookie cup with fresh jam, whipped cream, and strawberries. It is the perfect combination!! I love to serve these at parties and holidays. They are bitesize, delicious, and so pretty to look at!


Ingredients:

-1/2 cup butter (softened)

-3/4 cup all purpose flour

-1/4 cup powdered sugar

-1 tsp cornstarch

-12 teaspoons of organic strawberry jam (seedless) (*OR you can make homemade strawberry jam, I will attach a recipe below)

-1 cup of heavy whipping cream

-2 tablespoons powdered sugar

-1/2 teaspoon vanilla

-fresh strawberries to garnish

-Homemade Strawberry Jam:

-1lb fresh strawberries

-1 1/4 cup sugar

-2 tablespoons lemon juice

-Add the strawberries and sugar to a pot and bring to a boil, mash with a potato masher and then add the lemon juice. Boil/simmer for 15 minutes, constantly stirring and then pour into a jar with a cover and cool in the refrigerator. It will last up to 2 weeks stored properly in the refrigerator.

Next Step:

-Preheat oven to 350 F and lightly butter your mini muffin pan.

-In a medium size bowl add the butter, flour, powdered sugar, and cornstarch.

-With a hand mixer, mix for a couple minutes until your dough forms.

-Dust your hands with flour and form into 1 1/2 inch balls.

-Place the balls into your muffin tin.

-Flour the bottom of a shot glass and gently push the balls down so you form a cup. The dough should rise up along the sides. You can even the cups out with your hands after you push down to form the cup.

-After all 12 cups are formed, take a fork and push down in the center (only once!) to create a little air flow while baking.

-Bake for 14-15 minutes. Take out when the edges turn a light golden color.

-Let cool for 15 minutes and then gently take a knife to loosen and remove from the pan.

-Make your whipped cream.

-In a medium bowl, add the heavy whipping cream, 2 tablespoons of powdered sugar, and the oat milk.

-With a hand mixer, mix until high peaks form.

-Then put together the tarts! Take the shortbread cup and add a teaspoon of strawberry jam in the center. Then add a dollop of whipped cream and top off with a strawberry. (you can put the whipped cream in a baggie and clip off the end to get a smooth flow of whipped cream to put on the shortbread)

-Serve and ENJOY!!
