I love these chocolate protein pumpkin muffins! They are so delicious, easy to make, and great for on the go! Pumpkin is highly nutritious and rich in vitamin A, antioxidants, and fiber. With the addition of protein powder, these muffins are a great healthy treat! They also freeze really well!
Ingredients:
-1/2 cup butter (softened)
-1 cup granulated sugar
-2 eggs
-1 tsp vanilla extract
-1 tsp baking soda
-1 tsp baking powder
-12 oz organic canned pumpkin puree (not pumpkin pie)
-1 cup all purpose flour
-1/2 cup chocolate whey protein powder
-1/4 cup unsweetened cocoa powder
-1 tsp cinnamon
-1/2 tsp salt
-1 cup mini dark chocolate chips
Next Step:
-Preheat oven to 350F and add liners to your mini muffin pan or lightly butter.
-Using a hand or stand mixer cream the butter and sugar together until fluffy.
-Add in the eggs and continue to mix.
-Add in the vanilla and pumpkin puree and mix.
-In a separate bowl combine the flour, protein powder, cocoa powder, cinnamon, salt, baking powder, and baking soda.
-Slowly add in the dry ingredients to the wet ingredients and mix.
-Fold in the chocolate chips and fill muffin tin almost to the top.
-Bake for 11-14 minutes (make sure to insert a toothpick to make sure it comes out clean.)
-Let rest for 10 minutes.
