
I could eat these all day! They are so delicious and fun to make. My kids love helping me on this one. The granola tarts are crunchy and flavorful and the fresh strawberry whipped cream is my favorite! This recipe is healthy and can easily be made gluten free with using GF oats. This could be a fun Valentine's Day breakfast, an afternoon snack, or dessert for any night!
Ingredients:
-1 cup Quick Cooking Whole Grain Rolled Oats (you can also substitute Gluten Free Oats)
-1/4 cup brown sugar
-1/4 cup chopped pecans
-1 teaspoon ground cinnamon
-2 tablespoons of salted melted butter
-1 teaspoon of pure maple syrup
-1 teaspoon of raw honey
Whipped Cream-
-1 1/4 cup of fresh strawberries
-1 cup of heavy whipping cream
-2 tablespoons of powdered sugar
-1/2 teaspoon vanilla extract
Toppings:
-Fresh strawberries- sliced/chopped

Next Step:
-Chop up the strawberries and pulse in a blender until you have a smooth puree.
-Then strain the strawberries in a mesh strainer to remove all of the seeds. (Use a spoon to push the puree through the strainer)
-On the stovetop in a small pan add the puree and cook over medium heat. Bring to a boil and stir constantly so the strawberry puree doesn't burn. Do this for 10-15 minutes until your puree becomes thick and reduces.
-Put the strawberry puree in the refrigerator to cool. This will need to be cooled completely. I like to do this step in advance or the night before.
-Preheat your oven to 350 F.
-Lightly butter a heart shaped pan.
-Combine the oats, brown sugar, pecans, cinnamon, melted butter, maple syrup, and honey in a bowl and mix with a spoon.
-Transfer 2 large tablespoons into your heart pan and gently push down.
-Bake for 10 minutes.
-Take out of the oven and push down your granola mixture with the bottom of a spoon.
-Put back in the oven and bake for an additional 2 minutes.
-Remove the pan from the oven and let the granola tarts cool for 15 minutes.
-Then gently take a knife around the edges to release your tart. Set aside.
-Make the whipped cream. In a small bowl combine the heavy whipping cream, sugar, vanilla, and strawberry puree. Mix with a hand or stand mixer for 5 minutes, or until you get high peaks on your whipped cream.
-Put together your tart! First you take the granola heart, add a dollop of strawberry whipped cream, and then top with fresh strawberries.
