Mini Cinnamon Swirl Loaves!


How do I begin to describe how delicious these mini cinnamon swirl loaves are!?! They are the perfect size to serve at brunch, to have for breakfast or as an afternoon snack, and great to give to friends and family on special occasions. They are so moist in the middle, have a delicious cinnamon swirl running through the whole loaf, and a yummy crumble on top! This has been voted as a favorite in my house. I hope you love it as much as my family does! xo


Yields: 8 mini loaves

Ingredients:

-1 cup salted butter (softened)

-1 cup dark brown sugar

-1 cup granulated sugar

-6 eggs

-2/3 cup sour cream

-3 teaspoons vanilla extract

-3 cups all purpose flour

-1/2 teaspoon baking powder

-1/2 teaspoon baking soda

-1/4 teaspoon salt


Swirl:

-2 tablespoons ground cinnamon

-2 tablespoons oat milk (any milk will work)

-6 tablespoons dark brown sugar


Sprinkle:

-4 tablespoons dark brown sugar

-1/2 teaspoon cinnamon

Next Step:

-Preheat oven to 325 F and lightly butter an 8 loaf mini baking pan.

-In a large bowl, cream the butter and sugars using a hand or stand mixer.

-Then add in the eggs and vanilla extract. Continue to mix.

-Lastly, add in the sour cream and mix. Set aside.

-In a small bowl add the flour, salt, baking powder, and baking soda. Stir to combine.

-Pour the dry ingredients into the wet ingredients and mix with a hand or stand mixer until just combined. Set aside.

-To make the swirl, add the cinnamon, oat milk, and brown sugar to a small bowl and mix with a spoon. Set aside.

-Add 1/4 cup of the batter into the bottom of each mini loaf space. Spread out.

-Drizzle 1 teaspoon of the swirl all over the top of each mini loaf.

-Add another 1/4 cup of the batter on top of the cinnamon swirl and gently spread out.

-Next drizzle 1/2 teaspoon of the cinnamon swirl on top.

-Using a toothpick gently swirl the batter in a figure 8 motion.

-In a separate bowl make the sprinkle topping. Add the dark brown sugar and cinnamon and mix.

-Sprinkle all over the top of your mini loaves.

-Bake for 25-28 minutes or until a toothpick inserted comes out clean.

-Let cool, serve, and ENJOY!!!
