
Start your day of right with these healthy and tasty matcha pancakes! Matcha has so many health benefits. It is high is antioxidants, boosts brain function, helps to prevent cancer, and promotes heart health. Even though these pancakes are green, my kids love them! That says a lot about how good they taste! haha
Included in the pancakes are flax seeds, applesauce, whole grain oats, coconut sugar, and more! They are delicious and easy to make. I always make a big batch and heat them up throughout the week.
Prep time: 10 minutes Cook time: 5 minutes
Ingredients:
-1 cup white whole wheat flour
-1 cup and 2 tablespoons of oat milk
-1/2 cup quick cooking rolled whole grain oats
-2 teaspoons matcha powder
-1/2 teaspoon baking soda
-3 tablespoons coconut sugar
-2 tablespoons melted salted butter
-1 egg
-1 teaspoon ground flaxseeds
-1 tablespoon pure maple syrup
-1/4 cup sweetened applesauce
-3 tablespoons mini dark chocolate chips
Next Step:
-In a small bowl add your oat milk and oats. Set aside for 10 minutes.
-In another bowl add the flour, matcha powder, baking soda, coconut sugar, flaxseeds, and mix with a spoon to combine.
-Once your oats and milk are done resting, add in the egg, syrup, applesauce and mix.
-Once mixed add in the melted butter and mix.
-Add the wet mixture to the flour mixture and mix. (If too thick you can add another tbsp of oat milk)
-Add in the chocolate chips and stir.
-On the stovetop on low heat, add a little butter to your pan. Cook your pancakes. Flip when they start to bubble and then cook on the other side for a minute or until they look done.
-When they are done sprinkle a little bit of powdered sugar on top.
-Serve with pure maple syrup and a side of fruit.
