Lemon Rosemary Dijon Spinach Salad!!


Tonight I was craving a lemony dijon salad with salmon. It turned out so good, I had to share the recipe! The salmon is so delicious, bursting with flavor, and was ready in 20 minutes! The marinade is packed with fresh rosemary, fresh thyme, lemon juice, garlic, shallots, mustard and more. It worked perfectly on a baby spinach salad with veggies, walnuts, and feta. I will definitely be making this again!!


Prep time: 10 minutes Cook time: 10 minutes

*Double the recipe if serving more than 2 people.*


Ingredients:

-2 salmon fillets

-1/2 tablespoon grainy mustard

-1/2 tablespoon of chopped shallots

-1 clove of garlic (chopped)

-1 tablespoon fresh lemon juice

-1/2 teaspoon olive oil

-1/2 teaspoon fresh rosemary (chopped)

-1/2 teashop fresh thyme (chopped)

-salt and pepper

-4 lemon slices

-3 cups of baby spinach

-cherry tomatoes

-cucumber

-red onion

-chopped walnuts

-crumbled feta cheese

Dressing:

-2 tablespoons fresh squeezed lemon juice

-2 teaspoons olive oil

-1 teaspoon apple cider vinegar

-1 teaspoon raw honey

-1 teaspoon dijon mustard

-Pinch of salt

-Pinch of pepper

-Pinch of oregano

-Pinch of basil

-Pinch of red pepper flakes

-1 clove of garlic


Next Step:

-Preheat oven to broil and spray the bottom of a baking sheet with cooking spray. Don't use parchment paper when broiling.

-Prepare your salad dressing. Combine all of the ingredients- lemon juice, olive oil, apple cider vinegar, honey, mustard, salt, pepper, oregano, basil, red pepper flakes, and garlic. Stir to combine and set aside.

-In a small bowl combine all of the ingredients for your salmon marinade. Add the mustard, shallots, chopped garlic, lemon juice, rosemary, thyme, salt, pepper, and olive oil. Mix with a spoon to combine.

-Place your salmon fillets on a baking sheet and generously spread the marinade on the salmon.

-Place 2 lemon slices on each salmon fillet.

-Broil for 8-11 minutes. (Cooking time will vary based on the thickness of your fish). It is important to start checking around the 8 minute mark.

-While your salmon is cooking, prepare your salad.

-Add spinach to each bowl and toss in your tomatoes, cucumbers, feta, walnuts, and onions. (as much as desired). I often like to add avocado too, but didn't have any left.

-Place your cooked salmon on top of your salad and serve with a side of dressing.

-If you prefer, you can toss your salad with the dressing before you place the salmon on top.
