Lemon Pepper Shrimp Orecchiette!


This delicious meal can be ready and on your table in 20 minutes! It is perfect for the busy weeknights when you are craving a good meal but don't want to be in the kitchen for hours. This sautéed lemon pepper shrimp is the perfect addition to this pasta dish. I always love a good meal that the whole family can enjoy!!


Ingredients:

-1 lb cleaned and deveined shrimp.

-1/2 small lemon

-1/2 teaspoon ground pepper. (for a more peppery flavor, feel free to add more)

-1 tablespoon butter

-1 tablespoon of olive oil

-1 clove of garlic

-1 Box orecchiette pasta

-Large head of broccoli

-1/3 cup extra light virgin olive oil

-1 overflowing tablespoon of dried basil

-4 large garlic cloves (chopped fine)

-1/4 teaspoon red pepper flakes

-1/2 teaspoon pepper

-1/8 salt

-1/2 cup of sharp provolone (shredded)

-1/2 cup parmesan cheese (and extra to sprinkle on!)


Next Step:

-Boil a large pot of water for pasta. Remember to salt your water before you put your pasta in. -Once boiling add the pasta and cook to al dente.

-Chop the broccoli into bite size pieces and steam (approximately 5-6 minutes) or boil (3-4 minutes) or until the consistency you prefer your broccoli. Once done set aside.

-While the pasta is cooking add the butter and olive oil to the pan. Heat on medium. Sprinkle the pepper all over the shrimp and add it the the hot pan. Cook for 2 minutes and then flip the shrimp. When you flip the shrimp, add the clove of garlic to the pan and squeeze 1/2 lemon onto the shrimp. Cook another 2 minutes. Set aside.

-When the pasta is done save 1/2 cup of the pasta water and drain the rest.

-After draining the pasta, put the pasta back in the pot and sprinkle on 1/2 cup of shredded provolone and add 3 tablespoons of the cooked pasta water.

-Add the olive oil to your pan. Heat oil on low.

-When the oil gets hot add the garlic, basil, pepper, salt, and red pepper flakes.

-Constantly stir for 1-2 minutes so your garlic doesn't burn.

-Then pour then garlic/olive oil mixture over the pasta. Add in the broccoli and parmesan and stir. (put heat back on low while mixing everything)

-Add the orecchiette and broccoli to your dish and top off with the lemon pepper shrimp and extra parmesan.
