Lemon Cupcakes with Vanilla Icing!


I love these lemon cupcakes! They remind me of the lemon cake my mother used to make when I was a child. They are SO delicious and easy to put together. They are soft, moist, and bursting with lemon flavor!


Ingredients:

-1 1/4 cup flour

-1 1/2 teaspoons baking powder

-1/2 teaspoon baking soda

-1/4 teaspoon salt

-1/2 cup salted butter (softened)

-3/4 cup granulated sugar

-1/2 cup milk (I used oat milk)

-1 1/2 tablespoons lemon zest

-1/3 cup fresh squeezed lemon juice

-2 eggs


Vanilla Icing:

-1 stick of butter (melted)

-3 cups powdered sugar

-1/4 cup milk

-1 teaspoon vanilla extract


Next Step:

-Preheat oven to 350 F and line a muffin pan with liners.

-In a large bowl using a hand or stand mixer combine the butter and sugar.

-Then add in the eggs, milk, lemon zest, and lemon juice. Mix for 1 minute.

-In another bowl combine the flour, baking powder, baking soda, and salt. Whisk to combine.

-Add the dry mixture to the wet mixture and mix until combined.

-Add the batter to the muffin pan, filling almost to the top.

-Bake for 17 minutes or until a toothpick inserted comes out clean.

-Take out and let cool completely.

-Make the icing. In a medium size bowl combine the butter, powdered sugar, milk, and vanilla extract.

-With a hand mixer, mix until fully combined.

-Add the icing to each cupcake.

-Serve and ENJOY!!
