Kale & Shaved Brussel Sprout Salad w/Rosemary Garlic Vinaigrette!!


I have been craving salads lately. I absolutely loved this healthy and delicious kale and brussel sprout salad with toasted pumpkin seeds and topped off with a rosemary garlic vinaigrette. This salad is packed with nutrients, antioxidants, vitamins, fiber, protein, minerals, and more! This salad will keep you full and satisfied throughout your day! If you would like to add more protein, you can add shrimp, chicken, salmon, or tuna on top.


Ingredients:

-1 cup chopped fresh kale (chop fine)

-3/4 cup shaved brussel sprouts

-1/4 Granny Smith apple (sliced)

-1/4 ripe avocado (sliced)

-red onion (sliced)

-Jalapeño (sliced)


-Raw pumpkin seeds

-1/2 tablespoon salted butter

-Paprika

-Cayenne Pepper


Rosemary Garlic Vinaigrette:

-1/4 cup olive oil

-2 rosemary sprigs

-3 gloves of garlic (chopped)

-1/4 cup white wine vinegar

-1/4 teaspoon ground black pepper

-1/4 teaspoon salt

-1/4 teaspoon red pepper flakes (optional)

-1/2 tablespoon honey

Next Step:

-I always start this salad by making the dressing.

-On the stovetop heat the olive oil on low. Then add in the chopped garlic and rosemary.

-Stir and let simmer for 3-4 minutes.

-Remove from the heat and strain the garlic and rosemary out. Set aside.

-In a cup with a lid, add in the white wine vinegar, black pepper, salt, honey, and red pepper flakes. Then pour in the strained olive oil. Cover, shake, and place in the refrigerator.

-Next, add 1/2 tablespoon of butter to a pan on the stovetop. (on low heat) Once melted add the pumpkin seeds and a sprinkle of paprika and cayenne pepper.

-Constantly stir for a couple of minutes until you see the pumpkin seeds start to toast and take on a nice golden color. Set aside.

-Next chop up the kale (very small) and shred the brussel sprouts. (I like to shred my brussel sprouts on the largest cheese grater setting)

-Add the kale and brussel sprouts to your bowl.

-Next add all of the toppings! Sliced apples, jalapeños, avocado, and onions. Sprinkle on the toasted pumpkin seeds and drizzle the rosemary garlic vinaigrette on top.

-ENJOY this healthy and delicious salad!!
