Italian Chicken Pesto Pasta Soup!! (Slow Cooker)


Just as the weather started to warm up, it is cold again! So time for one of my favorite soups. This Italian Chicken Pesto Pasta soup is so delicious and easy to make! What's better than putting everything into the slow cooker and at the end of the day you have an incredibly flavorful soup!?! This soup is packed with fresh herbs, lemon, pesto, chicken, and lots of fresh vegetables. This recipe is a big hit with my whole family! Enjoy!


Prep time: 10 minutes Cook time: High for 3-4 hours or Low for 6-8 hours

Ingredients:

-1lb thin sliced chicken breasts (4 pieces)

-6 cups Organic Chicken Broth

-1 small onion (chopped)

-4 carrots (peeled and sliced)

-2 celery sticks (sliced)

-2 tablespoons basil pesto

-2 tablespoons fresh squeezed lemon juice

-1 parmesan rind

-salt and pepper

-10 peppercorns

-1 large fresh sage leaf

-4 whole sprigs of fresh thyme

-1 cup chopped kale

-1/3 cup provolone (grated)

-1/3 cup parmesan (grated)

-1lb orecchiette pasta (you can substitute GF pasta)

-Red pepper flakes (optional)


Next Step:

-In a large crockpot add the chicken to the bottom and sprinkle with salt and pepper.

-Add the sliced carrots, celery, onion, chicken broth, pesto, and lemon juice. Lightly stir.

-Then add in the parmesan rind and peppercorns.

-Add the sage and thyme on top.

-Cover and cook on high for 3 1/2-4 hours or low 6-8 hours.

-With 40 minutes to go remove the sage, thyme, and parmesan rind.

-With 2 forks shred the chicken.

-Then add the kale and provolone. Mix with a spoon.

-Cook the orecchiette pasta to al dente, drain, and set aside.

-To your bowl add the pasta and then add the soup on top.

-Be sure to sprinkle a good amount of fresh parmesan on top!

-If you like a little spice, I also love to add red pepper flakes.

-Serve and ENJOY!!!
