Is there anything better than homemade salsa!?! I always have a batch of homemade salsa in my refrigerator to add to fajitas, tacos, eggs, and to have on hand for happy hour. It is so flavorful and has a kick of spice which I love. This salsa is perfect for anytime of year and is a favorite at parties!
Prep time:10 minutes Cooktime: 20 minutes
Ingredients:
-7 Roma tomatoes (washed and cut in half)
-1 medium yellow onion (remove skin and slice in quarters)
-1 medium red pepper (washed, seeds removes and quartered)
-5 cloves of garlic (skin on)
-1 large jalapeño pepper (whole, remove seeds with knife)
-1 serrano pepper (whole, remove seeds with knife)
-juice from 1/4 lime
-1/2 teaspoon of salt
-1/2 teaspoon of pepper
-1/2 teaspoon of cumin
-2 tablespoons olive oil
-1/4 cup fresh cilantro (chopped fine and packed)
*If you don't want your salsa too spicy, leave out the serrano pepper)
Next Step:
-Preheat oven to 450 F
-Spray a large baking sheet with olive oil. Then line up your tomatoes, red pepper, garlic, jalapeño, onions, and serrano pepper on the baking sheet. Drizzle with 2 tablespoons of olive oil and 1/4 tsp of salt and 1/4 tsp of pepper.
-Bake for 7 minutes
-Take out and flip your vegetables. Remove your garlic and set aside.
-Put back in the oven for 5 minutes at 450 F.
-After 5 minutes turn your oven to broil. Broil for 3 minutes.
-Take out and let cool for 10 minutes.
-Then add everything to your blender, including your garlic (make sure to remove the skin), lime juice, cumin, and the remaining salt and pepper.
-Pulse a few times until everything comes together and is blended. (This will happen quickly)
-Pour into a bowl and stir in your cilantro.
-You can serve warm or put in the refrigerator for a few hours to get cold.
-Serve with your favorite chips and vegetables!
