Homemade Pecan Almond Coconut Granola!!


Once you make this homemade granola, you will think twice before buying it in the supermarket. Homemade granola is so easy to make and will have your house smelling amazing! My whole family loves granola on their yogurt and smoothie bowls, so I always make sure to have a batch in the house. I personally love to grab a handful on the

go! :-) This healthy snack is filled with oats, pecans, almonds, and coconut. These ingredients are packed with tons of nutrients, protein, fiber, potassium, magnesium, and vitamin E. You can add granola to so many dishes and desserts, definitely give it a try!


Prep time: 5 minutes Cook time: 25 minutes Cooling time: 1 hour

Ingredients:

-2 cups quick rolled oats (you can substitute GF oats)

-1/4 cup coconut oil (melted)

-1/4 cup plus 3 tablespoons raw honey

-1/4 cup pecans (chopped)

-1/4 cup chopped sliced almonds (chop))

-1/2 cup shredded coconut (I also like to chop the coconut into smaller pieces)

-1/2 cup mini dark chocolate chips



Next Step:

-Preheat oven to 350 F and line a large baking sheet with parchment paper.

-In a microwave safe glass bowl melt the coconut oil and honey. Microwave in 25 second increments and stir after each time.

-In another bowl, add the oats, pecans, almonds, and coconut.

-Pour the coconut oil/ honey mixture over the oat mixture and stir to combine.

-Pour the mixture onto your baking sheet and spread it around making sure to cover the whole sheet.

-Put in the oven and bake for 25 minutes.

-Take out and let it rest for 1 hour. As it rests, it will crisp up!

-Once cooled mix in the chocolate chips.

-Serve and ENJOY!!
