Homemade Healthy Fruit and Nut Bars!!


I take these nut bars everywhere with me! So easy to pop in your bag on the way out and you have a quick and healthy protein packed snack. There are so many health benefits to adding this bar to your snack rotation. They have lots of healthy fats, fiber, protein, magnesium, vitamin E, vitamin B, and antioxidants. Sometimes I even crumble the bar up and add to my yogurt!


Prep time: 5 minutes Cook time: 30-35 minutes Rest time: 1 hour

Ingredients:

-3/4 cup salted and roasted almonds

-1/2 cup roasted and unsalted peanuts

-1/2 cup rice krispies (to make Gluten Free-substitute GF crispy rice cereal)

-1/4 pure maple syrup

-1/4 cup dried cranberries

-1/4 cup mini dark chocolate chips

-1/4-1/2 cup dark chocolate chips for drizzle on top


Next Step:

-Preheat oven to 325 F and add parchment paper to a 8.5 bread loaf pan. (the parchment paper is very important in this recipe)

-In a small bowl mix your almonds, peanuts, and maple syrup with a large spoon.

-Once combined add the rice krispies, cranberries, and chocolate chips.

-Mix for 1 minute until everything is combined.

-Add your mixture to your loaf pan and bake for 30-35 minutes.

-Remove from oven and let cool for 1 hour.

-Once cooled, heat up your chocolate chips and drizzle over your bar.

-Refrigerate for 5-10 minutes to let your drizzle harden and then slice into bars.

-Serve and ENJOY!!
